Kalathaki Limnou is a Protected Designation of Origin and is produced exclusively on our island -Limnos-.
It has a rich and unique taste as it is produced exclusively from goat’s and sheep’s milk by local animals that graze freely, which give their milk and consequently the cheese the taste of the nature of Lemnos.
Following the traditional method, after thickening the milk and cutting the “glass” we place the curd in the baskets by hand to get the characteristic shape.
It matures for at least 60 days and then is ready for consumption.
Kalathaki Limnou that is produced by Hrysafi Dairy won the Gourmet Quality Award in 2012 and the Gold Taste Award at the Milk Festival in 2009.
